I’m not usually the emotional type, but this 30-minute meal hit me hard.🥹 This was THE meal when my kids were growing up. One of their most requested dinners and always a favorite when friends came over for playdates. Making it again now, as my baby is about to start her senior year, brought me right back to those busy afternoons with a house full of kids. It’s funny how one simple meal can hold so many memories. 🤍 And the best part? It’s an easy all-in-one-pot meal that comes together in about 30 minutes! Link to everything used in this video https://www.amazon.com/shop/sivanskitchen/photo/amzn1.shoppablemedia.v1.9087cbc2-3e6d-4f0a-8294-a3ec6be1613f?ref_=aipsfphoto Ingredients • 1 (12 oz) package hot dogs or sausages, sliced into rounds • 1 large onion, finely chopped • 1 (500 g) package couscous/Ptitim • 4 cups water • 1 tbsp paprika • 1 tsp black pepper • 1 tbsp salt • 3 tbsp oil A simple plate of fresh veggies on the side always goes perfectly with this meal. 🥒🍅 Instructions Heat the oil in a pot over medium heat. Add the sliced hot dogs and cook for a few minutes until lightly golden with a nice crust. Add the chopped onion and cook briefly, then add the spices and mix. Add the couscous and 4 cups of water and bring to a boil. Continue cooking uncovered until the water reduces to about the same level as the couscous. Complete dinner in under 30 minutes✨ One pot, simple ingredients, minimal cleanup, and a dinner everyone actually gets excited about. Juicy chicken thighs, cozy penne pasta, and the freshest, creamiest side salad. These are the kinds of meals that end up on repeat in my kitchen because they’re easy, comforting, and just so good🥰 Ingredients 🐓🍝🥗 One pot chicken & pasta 1½ pounds boneless skinless chicken thighs/breast 1 onion, sliced ¼ cup olive oil 1 teaspoon salt 1 teaspoon paprika 1 teaspoon garlic powder ½ teaspoon black pepper 1 package 16 oz penne pasta 4 cups chicken broth or any broth you love ½ cup tomato paste Side salad 🥒🍅🥑 4 Persian cucumbers, chopped About a cup of cherry tomatoes 1 shallot 1 avocado Olive oil Fresh lemon juice Fresh lime juice Salt and pepper Instructions Place the chicken thighs in a bowl. Drizzle with olive oil and season with salt, paprika, garlic powder, and black pepper. Mix until evenly coated. Heat a large pot over medium heat. Add the chicken and sear for a few minutes on each side until golden. Scatter the sliced onion right over the chicken and let it soften in all the flavor. In a separate bowl or measuring cup, whisk together the broth and tomato paste until smooth. Once the chicken is nicely browned, add the pasta directly into the pot. Pour the tomato broth mixture right over the chicken and pasta and bring everything to a boil. Cover, reduce to a simmer, and cook for about 10 minutes until the pasta is tender and the chicken is fully cooked through. While everything cooks, chop the cucumbers cucumbers, cherry tomatoes, shallot, and avocado. Drizzle with olive oil and fresh lemon and lime juice, season with salt and pepper, and toss. That’s it.
